Microwave assisted freezing: The freezing technology of future

ABSTRACT

Microwave assisted freezing promises to be the technology of the future in the field of food freezing and its applications.  It is an innovative freezing technique in which microwaves were applied to the freezing process. The technique helped in retaining the physico-chemical and sensory qualities of the product without any freeze damage to the product. The improved microstructure of the food products showed that there is a lot of potential in this technology and it needs to be further investigated for different applications to a variety of food products.
