Whey: Boon for Human Health

ABSTRACT
Watery part of milk that remains after separation of curd or coagulated products that result from acid or proteolytic enzyme mediated coagulation of milk is called as Whey. It is a major by-product of the dairy industry, during the manufacture of paneer, channa, chakka, cheese, casein, etc. During manufacturing of these desired end products 80-90 per cent whey is produced. Some studies were carried out concerning the importance of whey is the nutritional value and therapeutic properties of its ingredients. It is a reliable source of number of high quality and biologically active proteins, carbohydrates, and minerals. Also it is now revealed that whey proteins have anti-carcinogenic, antimicrobial, antiviral,radical scavenging, muscle biosynthesis,anti-oxidant properties, and radio-protective roles. It is a biological waste having high potential to be a valuable raw material for value-added food and bioactive substances production.
