Pigmented rice: A miracle food for Modern-day world

ABSTRACT

Rice is the staple food of over half of the world population thus nutritional and food securities of our society heavily dependent on it.  Pigmented rice contains all the nutrients found in the aleurone layer and embryo. It occurs in yellow, black, purple, red, and brown colors. The bioactive agents (anthocyanins and proanthocyanins) in pigmented rice have many properties like anti-cancerous, anti-allergic, anti-aging, anti-diabetic, anti-obesity effects, and medicinal properties like treating ulcer, fracture, burns, skin lesions, etc. This article deciphers the health benefits and nutritional values of pigmented rice, which proves it a miracle food for our present and future generations.
