Agricultural Produce During COVID-19

ABSTRACT

The current pandemic scenario, due to COVID-19, greatly affects all sectors all over the world. Agriculture is one of them, whichis heavily affected, as it is the livelihood of many peoples in India. Due to the decrease in demand for agriculture produced, many farmers are suffered from economic losses. To overcome the limitation of small and marginal farmers, it is important to adopt the economic method of preserving the fruits and vegetables without deteriorating its quality. The adoption of various drying techniques can be helpful to improve the life of the produce. The dried fruits, when soaked in water can be used while most of the dried leafy vegetables can be used directly while others need to be soaked in water overnight and used. The nutritional content and the taste of the fruits and vegetables are preserved by this method.
