Antinutrients in Indian diet: Problem and mitigation

ABSTARCT
Vegetarian foods like Cereals, pulses, oils, fruits and vegetables are the main constitutents of Indian diet, which supplement different nutrients like carbohydrate, protein, fat, vitamins and minerals. Presence of several antinutrients like protease inhibitors, phytates, oxalates, saponins, lectins etc. in foods hinders efficient utilization of nutrients, minerals and vitamins by the digestive system. Prolonged consumption of raw and unprocessed food stuffs may cause several health issues like favism, lathyrism, goiter, thyroid disfunction, autoimmune diseases, kidney stone, etc. Adverse effects of antinutrients could be minimized through various food processing techeniques such as germination, boiling, blanching, leaching, fermentation, cooking, etc. The genetic manipulations of crops is an emerging approach for reducing antinutrient compounds in foods.
