ABSTRACT
India is one of the world’s largest producers and consumer of rice. Indians are die-hard lovers of dal chawal, chholechawal, rajma chawal which forms a prerequisite part of the Indian food diet. Several rice varieties are popularly available with varied aroma, color and taste. Despite all these, certain varieties are yet to be popular. One such type is bamboo rice, a beautiful, natural short grain. This is the last souvenir of a dying bamboo shoot. This article represents an interesting story of bamboo rice formation, its medicinal and nutritional importance, the reason for its unavailability, etc.
