Microgreens: A Food For Nutritional Security

ABSTRACT

There is a positive concern towards the phytoneutraceuticals among people in recent days, especially elevated during and after facing the worst pandemic disease called COVID-19, demanding the healthiest diet to boost immunity system to counteract the diseases. Even under Sustainable Development Goal 3, ‘Good Health and Well-Being’ is emphasized and aims at reducing premature mortality from NCDs (UN, 2021). In spite of various forms of vegetables already available, more emphasis is given to an emerging special food that is none other than microgreens, which are tiny compared to baby greens (viz., spinach, kale) and usually harvested later than sprouts (viz., wheat, mung bean). These colourful microgreens find their application in garnishing, salads, desserts, appetizers, sandwiches, soups, etc. as they are appreciated for their distinct flavour, vivid colours, texture, and delicacy useful at enhancing the taste, flavour and quality of foods. Countries like India, leading with respect to population in the world and about 14% population is estimated to be undernourished (India stands at the position of 107th out of 121 countries with respect to the World Hunger Index, 2023), to feed the emerging hunger, we are really in need of most nourishing form of foods which are easily accessible, affordable to the consumers.
